You can make dishes using the red potatoes as you are not needed to spend time in peeling their think skin. Just leave the smooth skin as it is while baking or roasting these potatoes. Further, there are many options to season these vegetables using different varieties of herbs and spices. The simple balked or roasted red potatoes can be made simply by seasoning the sliced pieces, and then putting these inside the microwave or oven.

Recipe I

Ingredients

  • 1/2 pound red potatoes washed and quartered (proximately 6 small potatoes)
  • 1 teaspoon of garlic powder
  • 1 teaspoon of fresh ground black pepper
  • 1 tablespoon of dried parsley
  • 1 dash of sea salt
  • 1 teaspoon of olive Oil
  • microwave steamer bag

Instructions

  1. Wash the potatoes well by rubbing with your hands and use a sharp knife to chop these into quarter-sized pieces.
  2. Place the sliced onions inside the steamer bag and add garlic powder, ground black pepper, dried parsley, sea salt and olive oil. Shake the steamer back gently so that the sliced red potato pieces are coated completely with the seasonings.
  3. Put the bag inside the microwave for about 8 minutes or follow the instructions mentioned on the steamer bag for baking.
  4. Remove the bag from microwave and let it remain in the same condition for about 2 minutes.
  5. Open the bag carefully because the dish will be hot. Transfer the baked potatoes to plates and serve the dish to guests when the same is still hot.

Recipe II

Ingredients

  • 1 pound baby red potatoes (chopped into quarters)
  • 5 cloves of garlic
  • 1 fennel bulb (julienned)
  • 1/4 teaspoon sea salt
  • virgin olive oil
  • salt and pepper to Taste

Instructions

  1. Pre-heat the oven at 400 degrees.
  2. Wash the potatoes well by rubbing with your hands and use a sharp knife to chop these into quarter-sized pieces.
  3. Put the chopped red potatoes, garlic, fennel bulb and sea salt inside a large size baking bowl. Combine these ingredients and drizzle the ingredients with the virgin olive oil. Mix these ingredients well till the potatoes are coated well with the olive oil and other ingredients.
  4. Now place the baking bowl inside the pre-heated oven and bake the red potatoes. Bake these potatoes for about 30 minutes or till the sliced pieces turn golden colored and tender.
  5. Remove the bowl from oven and add salt and pepper to your taste. The microwave red potaoes are ready and can be served to your guests when the dish is still hot.
