If you are serving a wide variety of food items, you can further experiment with multiple recipes and complement a course with matching hot sauces made by you.
Recipe I
Ingredients
• 4 cloves of minced garlic
• 1 cup of diced red onion
• 3 cups of diced tomatoes
• 3 tablespoons of extra virgin olive oil
• 2 medium chili peppers
• 4 habanero peppers, seeded
• 1 cup of distilled white vinegar
• 2 teaspoons of salt
• 2 teaspoons of white sugar

Instructions
1. Place the extra virgin olive oil into a large saucepan and put the saucepan on medium heat to heat the oil. Add the diced red onion, chili peppers, seeded habanero peppers along with the minced garlic cloves to the hot oil. Keep stirring the ingredients continuously and cook for about 3 to 4 minutes or till the onions turn brown.
2. Reduce the heat and add the diced tomatoes, distilled white vinegar, salt and white sugar to the cooked ingredients. Keep stirring the ingredients and cook for about 6 minutes by breaking down the tomatoes completely.
3. Remove the saucepan from heat and transfer the mixture to a blender or food processor. Blend all these ingredients till the same is converted into puree.
4. Cleanse the mixture by pouring through a fine mesh sieve.
5. The delicious sauce is ready for serving. You can serve the dish hot to your guests when the same is too hot and even leave it for about an hour to cool down.

Recipe II
Ingredients
• 3 plum tomatoes
• 1/4 cup of water
• fresh habanero chilies(1 to 3)
• 2 garlic cloves unpeeled
• juice of one orange and one grapefruit
• salt and ground-pepper to taste

Instructions
1. Put a cast iron skillet over medium-low heat for heating. Add the tomatoes, chilies and garlic to the hot skillet and pan roast these ingredients for about 20 minutes or till those become tender and brown on all sides. Keep turning the ingredients frequently during the entire roasting process.
2. Remove the skillet form heat and transfer the roasted tomatoes a blender. Remove the seeds or stems from the roasted chilies add these to the tomatoes placed inside the blender. Also, add the garlic cloves to the blender after peeling it properly.
3. Add the water, orange and grapefruit juice to the other ingredients kept inside the blender and process the mixture till a smooth puree is formed.
4. Season the puree with salt and ground-pepper to your taste. Now the delicious hot sauce is ready and you can serve these hot along with other dishes or snack items.
