Ingredients:

  • 2 lemons
  • 2 oranges
  • 1 gallon of filtered or spring water
  • 3 lbs sugar
  • siphon
  • wine yeast
  • 4 oz dried fruit
  • 1 lb fresh herbs

At first, collect fresh fruits. Arrange large plastic or stainless steel containers to collect the extracted juice. Also arrange an electronic juicer, sterilization liquid or tablets, a tube for siphoning, and glass bottles to store the drink.

As an initial step, extract the juice. You can use your hand or the electric juicer. Clean herbs. After extracting the juice, add the sugar. You need to add sugar for most wines except when you choose sweet grapes. Then you have to add water, dried peel fruit and herbs together. Collect them in a big pot and stir. After that you have to boil it for twenty minutes.

Then leave the mixture for half an hour to be cool. Clean the bottle with hot water. Pour the mixture into a gallon bottle.

Allow the mixture to become cool to 110 degrees F. Add a little wine yeast. But one yeast packet can be used to make 20-30 gallons.

Install fermentation lock and fill with water. Place bottle in a dark and cool place and wait. Ensure if yeast is growing. If the yeast grows, the liquor will look cloudy. Watch the bottle at every few days till the liquid looks clear.

Transfer the liquid into clean bottle. It will distress the yeast that has fallen to the bottom least possible. Fill up again the fermentation lock and place the bottle back in its place. It will help the left over yeast to ferment. You should transfer the mixture into clean bottle after few interval days and fill up the fermentation lock again until wine turns totally clear.

Cork the bottle and wait a few months. It may take 12 weeks or 3 months to complete fermentation. Bring used bottles and corks from your local shops but ensure to clean and sterilize them completely. Fill up each bottle right up to the neck and cork of each bottle one at a time. You may choose to do this all simultaneously.

You can go for tasting the liquor by putting a straw into the bottle. If you believe the liquor is ready to serve, use it.

You may also choose fruits and herbs like blueberry and sage, currants and sage, fig and parsley, etc. it is arranges to make dry wine. If you want to make sweeter liquor, add more sugar. Seek advice from your liquor yeast shop on which yeast to add for a dryer or sweeter liquor. Make use of clean equipments and stuffs.
