There are many kinds of pancakes you can make according to the ingredients you use. Vegetable pancakes can be easily made and are very tasty. You can put in a variety of vegetables which means that you are providing great nutrition to the body. Once you get the ingredients ready, cooking is only a matter of minutes. If you are an expert at mincing and slicing vegetables, making this recipe will literally be a cakewalk for you.

Ingredients:

  • 40 gms fine wheat flour
  • ½ egg
  • 100 ml milk
  • 3 tsp oil
  • 50 gms potato
  • 50 gms cauliflower
  • 50 gms carrot
  • 75 gms peas
  • 50 gms tomato
  • 1 tbsp butter
  • ½ tbsp tomato sauce
  • Salt and chilli powder to taste

Procedure:

  • First of all, you have to make the batter with the flour. Take the fine flour and add some salt to it. Pour in the milk and break an egg into the flour. Mix thoroughly and make a smooth batter. There should be no lumps in the batter and the ingredients should be well mixed. If it pleases you, you can break the egg into another container, beat it well and add it to the flour. This will make the batter creamy and the pancake soft.
  • After you make the batter, set aside for an hour in a cool place. This will give you better results when making the pancakes.
  • Now you can make the filling. Chop all the vegetables so that you have fine pieces. Take a pan and heat the butter in it. Put in all the chopped and shredded vegetables along with the salt, pepper and chilli powder. Cover and cook till the vegetables are soft and done. Cook on low flame so that you don’t burn the vegetables.
  • When the vegetables are all soft and cooked, put tomato sauce in it. Mix well. The filling is now ready. You have to prepare the pancakes now and put the filling in.
  • Take another flat pan and put a little oil in it. Spread the oil well. Now put one spoon of batter in the pan. Spread out as thinly as possible. Wait till the lower side turns brown and then turn it upside down. Cook both sides equally and take out. Use all the batter to make many such pancakes.
  • Now put a little of the filling into the center of all the pancakes you have made. Divide the filling equally between all the pancakes. There should be enough for taste but not too much either. Now roll the pancakes so that you have the filling nicely stuffed inside. The pancakes are now ready. If you have some chutney of mint leaves and coriander or even coconut, you can have a delicious meal.

You can see that your kids will love to have these pancakes. These are not only delicious and filling but also very nutritious. There is not much oil or butter involved and you can have a lot of green vegetables which is good for health.
