As tomato is the ovary of a flowering plant, it is botanically considered as a specific fruit or berry. But as most of the time tomato is used as an ingredient for making different dishes, people mostly consider tomatoes as a vegetable. Even though most of the plants produce red tomatoes; still the vegetable is also available in other colors like yellow, orange, pink, purple, green and white fruit. Also the tomatoes are available in small cherry size as well as in elongated plum sizes. This is also the only vegetable which is consumed raw and cooked as well as used for making juices. These vegetables are rich in Vitamin A and C and naturally low in calories. You can find hundred of recipes which use tomatoes as the main and supplementary ingredients. Most of the dishes using tomato as a main ingredient are very simple and easy to make.

Recipe I

Ingredients

  • 4 large tomatoes
  • 2 stalks celery, chopped very fine
  • 1/4 bell pepper, chopped very fine
  • 1 teaspoon accent
  • 4 tablespoons of sugar
  • salt and pepper to taste
  • 2 cups of water

Instructions

  1. Soak the tomatoes in boiling water for one minute. Peel the tomatoes by pulling away the skin gently.
  2. Place the tomatoes in a large pot. Now add the other ingredients like the chopped celery, chopped bell pepper, accent, sugar, salt, and pepper to the peeled tomatoes.
  3. Cover the pot and put it on stove for cooking. Boil the mixture gently for 15 minutes or till the tomatoes become tender.
  4. Serve the stewed tomatoes with croutons.

Recipe II

Ingredients

  • 1 quart peeled and cut up tomatoes
  • 1 green pepper, diced
  • 2 stalks celery, diced
  • One small onion peeled and lightly chopped.
  • 1 clove of garlic, peeled and lightly chopped.
  • 1/2 teaspoon sugar
  • Sprig of parsley
  • Salt or celery salt to taste
  • Black pepper to taste

Instructions

  1. Place the peeled and cut up tomato pieces in a saucepan. Add the diced green pepper, peeled and lightly chopped onion and garlic along with 1/2 teaspoon sugar.
  2. Chop the parsley leaves and add to pan containing other ingredients.
  3. Put the saucepan on heat and cook on low heat till the celery becomes softer.
  4. Serve the dish with salt or celery salt, and black pepper as per your taste.
