Also you have to select the potatoes by keeping in mind that each breed of potatoes differs based on their starch and water content. You have to select the breed of potatoes which contain both starch and water in moderate amount. The roasted potatoes can be a great addition to your dinner. If the potatoes are baked using the proper method you can get baked potatoes full of flavor with a crispy outside and a soft and velvety inside. You can also prepare this dish easily while preparing your main dish.

Ingredients

You will need all these ingredients together for making roasted potatoes. So it is always better to lay out all the ingredients before you to start the cooking process.

  • 2 pounds of potatoes, washed, peeled, and cut into 3/4 inch chunks
  • 1 onion, chopped
  • 1/4 cup oil or pan drippings
  • Salt and pepper as per your taste

Instructions

Basic Recipe

  1. You have to wash and peel the potatoes for the purpose of roasting the potatoes. So wash these potatoes by putting under running water and then peel the potatoes off. Cut the peeled potatoes into chunks of 3/4 inch.
  2. Also chop the onion for using along with the potatoes for making the dish.
  3. Now place the potatoes in a pot and add required amount of water. Put the pot containing water and potato chunks on heat and bring it to a boil.
  4. Boil it for approximately 10 to 15 minutes based on the sizes of the potato chunks. But ensure that the potatoes are not cooked for more than 15 minutes.
  5. Remove the pot from heat after cooking, and drain the potatoes out.
  6. Now put the boiled potatoes and chopped onions along with oil. Season the mix to taste by adding salt and pepper.
  7. Place these mixed ingredients on a roasting pan and roast for approximately one hour. Keep turning the ingredients while roasting the potatoes.
  8. Now place the roasted potatoes on a plate and serve your guests when the dish is hot.

Variations of the Basic Recipe

  1. While tossing the boiled potatoes with oil you can also add one teaspoon of dried rosemary or tarragon to the potatoes.
  2. Similarly, you can add two chopped green or red pepper to the boiled potatoes and onion mixture while tossing with oil.
  3. You can also place the potatoes for roasting along with the meat. You need to reduce the amount of fat needed to 2 tablespoons, because the meat will produce additional dripping while being roasted. Add the potatoes to the pan when the meat is at least left with an hour to be roasted fully.
