How to Make Red Wine Vinegar
Almost every expert cook likes using red wine vinegar for marinating purposes and for salad dressings. This particular variety of vinegar is considered the best among the lot. - Mother of vinegar (also known as “starter culture”)
- 2 cups of dry or sweet red wine (10%-14% v/v)
- 2 cups of distilled water
- A 2quart mason jar (sterilized)
- Paper coffee filter
- Cheesecloth
- Stainless steel spoon (long handled)
- Rubber band
- Measuring cup (glass/stainless steel)
After having gathered the above mentioned ingredients together, we can proceed towards making red wine vinegar by following the step by step guide given below:
• You shall have to begin by pouring the entire amount of wine and water (as mentioned above) into the 2quart jar. After having done that, use a 6×6 piece of cheesecloth for tying over the jar. However it is advised that you use a double layer of cheesecloth for this purpose. Make sure that the cheesecloth is secured in place by either strings or rubber bands. Once you have done that, take the jar and place it in a dark and warm place for about 24hrs. Make sure that the jar isn’t disturbed during this period. After the stipulated time, remove the cheesecloth and add mother of vinegar to the jar while stirring gently. The initial week of the red wine vinegar formation process shall involve you to stir the contents of the jar each day so that the vinegar remains aerated. When the smell of the contents in the jar starts resembling vinegar, you know that the process has begun.
• Keep on storing the jar in the dark and warm place till you notice that a thin film has started developing on the top of the solution. This indicates the formation of mother of vinegar. The thickness of the layer of mother of vinegar depends on the intensity of warmth of the area where the jar is stored.
• Now is the time to keep a close watch on the solution. You shall notice that some of the water will evaporate when the solution starts turning into vinegar. Keep on tasting the vinegar regularly until you are satisfied with its pungency and sourness. After you are sure, use a coffee filter to separate the mother vinegar from the mixture. The red wine vinegar can now be stored and aged. However be sure that you store the vinegar for at least 6 months before using it.
