How to Make Noodle Soup
When you are down with a cold or flu, nothing works better than a hot homemade soup to revive your senses and pull you up. In fact, since generations, chicken soup has always been prescribed as a cure for common cold. Even otherwise, homemade soups have their own distinctive aroma and flavor, which is difficult to replicate in a restaurant.
There are many variants to soups and you can experiment with a whole lot of ingredients. If you have a palate for Chinese or Thai cuisine, noodle soup is a great option. You can prepare delicious noodle soup at home using meat or vegetables or both. Follow the step-by-step instructions given below and learn how to make yummy noodle soup at home.
Ingredients:
- Chicken
- 1 cup sliced Vegetables (carrots, cabbage, french beans, baby corn)
- 3 Celery ribs, thickly sliced
- Chicken broth or Chicken bouillon cubes
- 1 Dried noodles packet
- 2 tablespoons Vegetable oil
- 2 medium Onions diced
- 4 Garlic cloves (may be thinly sliced)
- 2” ginger crushed
- Fresh parsley
- 1 Bay leaf
- Black pepper and salt to taste
Method:
- You can either prepare the broth at home or purchase bouillon cubes. To prepare chicken broth, wash the chicken thoroughly, peel off the skin and place in slow cooker with about five cups of water. Reduce the heat once the water starts boiling. Simmer for about two to three hours or until the chicken is done. If you feel the process to be time consuming, you can consider using chicken bouillon cubes, which is dehydrated chicken stock.
- Once the chicken is done, remove it from the cooker. Debone the chicken and break it into bite size pieces. Use a strainer to strain the broth for any bones. Fat may be removed by refrigerating the broth overnight and then skimming off the fat layer from the top.
- Heat oil in a broth pot. Add onions and celery and cook for about two minutes. To enrich aroma, put in the garlic cloves and crushed ginger.
- Now add the sliced carrots, cabbage, french beans and baby corn. You can experiment with other vegetables too. Stir regularly and cook for about 10-15 minutes until the vegetables soften out
- In a separate pan, prepare the noodles as per instructions given on the packet. Drain the noodles completely and pour in a few drops of oil to prevent the noodles from sticking.
- Add the boiled chicken pieces into the mixture in the pot and then pour in the prepared chicken broth. Add sufficient water to cover the ingredients.
- Bring the concoction to boil over high heat. Now add parsley and bay leaf. Reduce the heat and cook uncovered for about ten minutes.
- Remove the garlic cloves, parsley and bay leaf from the broth. Put the cooked noodles into the mixture and cook for five minutes.
- Add salt and pepper for seasoning. You are now ready to serve your hot chicken noodle soup.
Tip:
Chicken broth can be prepared and stored in the refrigerator for upto two days. If kept in the freezer, you can store it for about two months.
