How to Make Lobster Bisque How to Make Lobster BisqueLobster bisque is a thick, rich soup which is served as a starter before dinner as well as a light meal. You can make the dish at home within one hour with a set of simple and easily available ingredients. By making the dish at home, you can get the original flavor of the lobster which is missing in most of the similar dishes served in various restaurants.

Recipe I

Ingredients

  • 2 cups of beef stock
  • 1/4 cup rice
  • 3 T butter
  • 1 carrot, sliced
  • 1 onion, chopped
  • 1 bay leaf
  • ½ t of dried thyme
  • 1 1 ½ lb. lobster
  • 1 cup of white wine
  • 4 cups of chicken stock
  • 1 T tomato paste
  • 1 cup of cream
  • Salt and pepper to your taste

Instructions

  1. Lay out all the ingredients before starting the cooking process. Kill the lobster just before making the dish and set it aside after completely rinsing off.
  2. Place the beef stock in a pot and add rice to it. Put the pot on heat and bring the mixture to a boil. Simmer the heat and cook for about 15 minutes. Remove the pot from heat and set it aside.
  3. Put 2T butter to a stockpot and melt it by putting it on heat. Add the sliced carrots and celery to the melted butter and sauté for about 5 minutes or till the ingredients become soft. Add the bay leaf, thyme, and lobster to the sautéed carrots and celery and cook for about 1o minutes after covering the pot. Keep cooking till the lobster shells turn red colored.
  4. Add the white wine and chicken stock to the cooked ingredients and cook for another 15 minutes on simmer.
  5. After cooking, remove the lobster from the pot and set is aside. Strain the broth and discard the vegetables from the mixture. Add the beef stock and rice mixture made earlier to the strained broth.
  6. Remove the lobster from the shell and chop it into small pieces. Keep the flesh pieces and discard the shell.
  7. Melt the remaining butter to a saucepan and add the tomato paste, roe, and tomalley. Keep sautéing the ingredients till those become smooth. Add the tomato paste to the mixture and mix all the ingredients well.
  8. Add these sautéed ingredients to the broth and whisk it till it becomes smooth. Add the lobster pieces to the broth and mix these well.
  9. Remove the pot from heat and serve the lobster bisque in soup bowls.

Recipe II

Ingredients

  • 2 Cups of lobster meat, cooked
  • 3 tbsp of Flour
  • 3 Cups of milk
  • 1/3 Cup of dry sherry
  • 1/4 Cup of butter
  • 1 tsp of Steak sauce
  • Seasoned salt to taste
  • Pepper and salt to taste

Instructions

  1. Put the cooked lobster meat and dry sherry in a bowl, mix the ingredients well, and leave the mixture aside for some time.
  2. Melt the butter in a saucepan and add flour to the melted butter to cook. Cook over low flame by stirring continuously till ir becomes smooth and bubbly. Add milk to the cooked flour and cook the mixture on simmer and keep stirring till the mixture turns thicker.
  3. Add the steak sauce to the mixture and, season the mixture with salt and pepper to your taste. Add the lobster meat and sherry to the mixture and cover the pot. Cook all the ingredients for another 10 minutes by stirring occasionally.
  4. Remove the pot from heat and transfer the lobster bisque to soup bowls for serving.
