Pickles also make excellent Christmas gifts or may be a last minute gift which you plan to give your teacher on her farewell party. Let us now learn the art of making dill pickles. But first we need to gather the essential items which are needed during its preparation. They are
as follows:
- 12 pint size mason jars
- Around 40 cucumbers (approximately 4-5 inches long)
- 4 cups of white vinegar
- 2/3 cups of pickling salt
- 24 cloves of garlic (peeled and cut into half)
- 60 sprigs of dill weed
- 12 cups of water
- Large enamel pot
- A large pot filled with water
The process is as follows:
- First we need to prepare the cucumbers. You will need to wash them and cut them into spears and then place them in a large container filled with water. Keep this container in the fridge for at least 2 hours but make sure it does not exceed 4.
- Sterilize the pint jars by boiling them in a large pot for 10 minutes. Now take the jars and place them on a cookie sheet which should be covered with a thin dish towel. Now is the time to place 3 dill weeds and 2 garlic cloves halves in the bottom of each of the 12 pint jars.
- Now take the cucumbers and pack them into these jars and then place 2 dill weeds and 2 garlic cloves halves on the top of the cucumbers.
- Take the large enamel pot and mix water, vinegar and salt in it. Put this pot on the stove and allow it to boil. Now put this boiling mixture into each of the 12 jars. Make sure to leave a space of ΒΌ inch at the top of the jars. Slightly shake the jars to enable the release of any air bubbles inside.
- Now we have to seal the jars. Take a clean damp cloth and use it to wipe the top of each jar. Take the respective lids and place them on the top of the jars. It is recommended that the lids should also be sterilized before using. Now screw the rings and seal the jars. You have to now place the jars in boiling water for 10 minutes. Make sure that the boiling water should cover more than half of the jar.
- The last step is to remove the jars from the boiling water and kept aside for 24 hours. You can taste the pickles after 8 weeks of its preparation.
