You can season the cooked long grains rice with a mixture of olive oil, lime juice, salt and chopped cilantro. At the same time, you can even make the Mexican version of the dish by cooking rice along with chicken broth in addition to the earlier mentioned ingredients. Some people consider basmati rice as the perfect rice variety to make the dish, whereas others prefer to make the dish by using brown rice. But you have to adjust the amount of liquid and cooking time based on the exact type of rice chosen by you as the main ingredient of the cilantro lime rice.

Recipe I

Ingredients

  • 2 cups of warm cooked white rice
  • 1 tablespoon of olive oil
  • fresh cilantro
  • lime
  • 1/2 tablespoon of salt

Instructions

  1. You can cook basmati rice and use two cups of the cooked rice to make cilantro lime rice for 2 to 4 people. The rice can be made by using any other variety of rice, but basmati rice is considered as the best to suit this recipe.
  2. Use a sharp knife and chop the fresh cilantro to get about 1/3 cup of the chopped cilantro. After chopping the cilantro, transfer these to a small bowl.
  3. Get a fresh lime and cut it into two halves by using the knife. Squeeze the lime halves into the small bowl carrying the chopped cilantro. Keep squeezing the lime halves till the juices have come out completely.
  4. Now add the tablespoon of olive oil and ½ tablespoon of salt to the bowl containing cilantro and lime juice. Stir the ingredients well to complete the seasoning mixture.
  5. Now transfer the two cups of cooked rice to a large mixing bowl. Add the seasoning mixture to the rice and stir the ingredients thoroughly. Keep stirring till the rice is coated evenly with the seasoning mixture.
  6. The cilantro lime rice is ready to be served. Serve the rice as a side-dish when the same is still hot.

Ingredients

  • 1 tablespoon of olive oil
  • 1 cup of basmati rice
  • 1 1/2 cups of chicken broth
  • 2 to 3 cloves of garlic, minced
  • 2 tablespoons of fresh lime juice
  • zest from one lime
  • 1/2 cup of cilantro, chopped
  • 1 teaspoon of salt

Instructions

  1. Add the tablespoon of olive oil to a saucepan and put it on low heat. Add the minces garlic to the hot oil and sauté the ingredients. Now add the rice and sauté on medium heat for about 2 minutes. Keep stirring the rice continuously during the cooking process.
  2. Add the chicken broth, fresh lime juice, and salt to the saucepan and mix all the ingredients. Increase the heat and bring the mixture to a boil. Now reduce the heat to low and cook the mixture for about 15 minutes. You can also refer to the cooking instructions mentioned on the long grain rice pack to decide the exact cooking time.
  3. Once the rice is cooked, add the lime zest and chopped cilantro. Stir in the rice properly to mix the ingredients well and evenly. The cilantro lime rice is ready and can be served hot to your guests.
