This is also a dish which you can easily prepare in few minutes to serve your unexpected guests. The soup will also be of great help when you are down with a flu or cold. This homemade soup will provide you an aroma and flavor which is not normally found in the dishes served at restaurants. The soup can be made in different variations and with different sets of ingredients. But each recipe gives you a chance to experiment with different ingredients and can be prepared within few minutes.

Recipe I


Ingredients

  • 2 cups of chicken broth
  • 1 cup of fresh or frozen corn
  • 1 small celery rib, chopped
  • 1 small carrot, chopped
  • 1 small onion, chopped
  • 1 cup of cubed cooked chicken
  • 1/2 cup of canned slice tomatoes
  • salt and pepper as per your taste


Instructions

  1. Bring a saucepan and place the chicken broth, corn, chopped celery rib, chopped carrot, and chopped onion into the saucepan.
  2. Put the saucepan on heat and set the stove at low heat. Cover the saucepan and simmer it for around 30 minutes or till the vegetables are tender.
  3. Now stir in the 1 cup cubed cooked chicken and 12 cup of sliced tomatoes along with salt and pepper as per your taste.
  4. Now heat through the mixture till the additional ingredients are mixed with the soup.
  5. Bring the pot down from heat and serve the soup hot.

Recipe II

Ingredients

  • 2 tablespoons of olive oil
  • 1 2 1/2 to 3 pound chicken, boned, skinned and visible fat removed
  • 2 1/2 teaspoons of salt
  • black pepper
  • 1 cup of chopped onions
  • 1/2 cup of chopped celery
  • 1/2 cup of chopped carrots
  • 1/2 cup of chopped green onions
  • 2 tablespoons of finely chopped garlic
  • 1/4 cup of parsley leaves
  • 1 tablespoon of chopped fresh basil
  • 4 bay leaves
  • 1 tablespoon creoles seasoning
  • 2 cups of assorted chopped fresh seasonal vegetables like beans, zucchini, squash or cabbage
  • 1 cup of rinsed, torn spinach leaves, firmly packed
  • 1/4 teaspoon of crushed red pepper
  • 3 quarts of chicken stock
  • 2 cups of fine or broad noodles, cooked until still slightly firm

Instructions

  1. Add the oil to a large soup pot and put it on high heat. Now add the chicken meat and bones along with salt and 10 turn of pepper to the hot oil. Cook the meat for around five minutes till the meat and bones are brown. While cooking, keep stirring the meat and bone occasionally.
  2. When the meat and bones are brown, add the onions, celery, carrots, green onions, garlic, parsley, basil, bay leaves and creoles seasoning to the saucepan. Cook the mixture for about five minutes by stirring it once or twice.
  3. After cooking for five minutes, add the chopped vegetables, spinach and crushed red pepper and cook the mixture for 1 more minute. Add the chicken stock to the mixture and bring it to a boil. Reduce the heat to medium and cook for around 25 minutes.
  4. After cooking the mixture, remove the carcass and loose bones from the dish. Add the noodles to the soup and boil the mixture for another five minutes.
  5. Bring the pot down from the stove and serve the chicken vegetable soup hot.
