You only need to keep the ingredients handy and be prepared to add a few more kilos to your waistline.

  1. Since you will be using melted butter, it is advisable to keep it outside the fridge for half an hour. Use a hand mixer or use a whisk attachment to make the butter light.   2. Slow down the mixer and add the confectioner’s sugar. Add only half the amount slowly and bring to medium speed. Keep whisking for 2 minutes.
  3. Add the cream slowly at this stage. You can also add milk if you don’t have cream. Whisk this for another 2 minutes.
  4. Now you can add the rest of the confectioner’s sugar. Add any essence that you want to. Vanilla tastes great, so you can use it. Also add a bit of salt. Now is the time to whip at high speed for about 4 minutes till the icing gets really fluffy.
  5. Use it at once to decorate your cake. You can also keep it in the fridge to be used later on. In this case, take out the icing and keep it at room temperature for about half an hour. You should then whisk the icing again before use. This will make it soft and fluffy like freshly made.
  6. You can refrigerate and use the icing for a maximum of 7 days. The cream might turn sour after that.
