How to Make Broccoli and Cheese Soup
Any kind of soup can really make your mouth water when the aroma of the ingredients reaches you. You cannot think of anything more nutritious, tasty and yet least time consuming. It is one food item loved by all, including kids and adults and can be cooked up in a variety of recipes. There is not much ingredients that you have to get together as most of them are available in your home. This broccoli and cheese soup not only tastes delicious but is a wholesome food for everyone which can also be a visual treat. Ingredients:
1 ¼ lbs broccoli
2 onions cut into small pieces
5 tbsp butter
7 cups chicken broth
1 tsp oregano
¼ cup flour
2 tbsp mustard
1 cup milk
2 cups of shredded Cheddar cheese
Salt and pepper to taste
Procedure:
- Take the broccoli and cut the florets out. Make into small sections. Take water in a pot and set on the stove to boil. Put the florets in along with some salt. This will soften the broccoli while cooking it. Boil and simmer for about 2 minutes.
- Take the broccoli out from the boiling water and drain away the water. Take some cold water in the pot and put the broccoli in again. Drain away the water again and keep the broccoli florets.
- Take the stalks of the broccoli and cut them into small pieces. If you have a large saucepan in the house, then bring it out and put the cut broccoli stalks in it. Slice the onions or cut them into small pieces and put them in too. Add the butter and place the saucepan on the stove and apply medium heat to it.
- Cook for 5 minutes and then add the oregano. You can also pour in 3 cups of the chicken broth and allow the broth to boil. When it starts boiling, simmer and cook for 30 minutes. Put off the heat and allow the broth to cool for about 10 minutes.
- When it is cool enough, put the mixture in the blender and process to give a smooth flowing broth. You can do in batches if the amount of the broth is a lot for your blender to handle at once.
- Take another saucepan and put the butter in it. Apply slow flame to the saucepan so that the butter melts. Add the flour with a lot of stirring. Simmer and cook till you get a smooth and bubbly paste.
- Now add the pepper and the mustard with constant stirring so that the ingredients mix well and the broth does not stick to the bottom and get burnt. Add the mixture in the blender with the remaining 4 cups of chicken broth to the saucepan. Keep stirring and simmering over slow heat.
- Wait till the soup starts bubbling and gets the desired consistency. Then add the milk and the cheese. Stir to mix the contents well. You will get a nice and smooth consistency in the soup when it is cooked.
Your soup is ready and you can ladle out into soup bowls. Garnish as you please and serve as a great appetizer. It will be food item which everybody will find hard resisting.
