How to Make Brie How to Make BrieBrie is used in many recipes but there is a particular way for making the brie. It uses a few specific ingredients and can be made in a particular process. It is much easier to buy it from the stores. But there may be some of you who will be curious enough to try out this recipe at home. You must be very careful and have a lot of patience too. You should wait for every stage of the brie making to be complete before going to the next stage. This will help you to make brie in the best possible way and you can use it for many recipes too. Usually people love to bake brie and use it in many ways. But if you want to know how brie is made in the first place, then here is the process.

Ingredients:

1 gallon milk
½ tsp calcium chloride
1/8 tsp G camembert
1/8 tsp P camembert
1/8 tsp EZAL meso culture
1 drop of B linens
1/8 tsp rennet

Procedure:

  1. Add the calcium chloride to the milk and heat till it reaches 90 degrees F. You can then add all the other 4 ingredients to the milk except for the rennet. Let the milk mixture for about an hour and then add the rennet. Allow the mixture to stand for 2 hours.
  2. You will get firmly set curds as a result which you must now use to prepare brie. Arrange for 2 molds which are perforated and have a diameter of 4” and height of 8”. Cut the cheese and divide into two halves. Dip each half into one mold with a plate underneath for support.
  3. Wait for an hour or two and flip the molds. In order to do this, you can put another plate on top and do it so that you don’t spill any of the cheese. After doing this for a few times the cheese will shrink to about 2” thick in each mold. Wait till the next day and you will see that the cheese will have taken on its own shape and will slide freely in the mold.
  4. Take about ¼ cup of salt on a plate and put the cheese from one mold on it. Turn the cheese so that the other side also gets rolled on salt. The edges should also have salt on them. The excess salt should be wiped off and the water oozing from the cheese drained away on a mat. Repeat the same process with the other cheese slab. The cheese is really soft and you have to be careful about handling it properly.
  5. Take a plastic or bamboo draining matt so that it can fit a plastic shoebox. Put the cheese in it and place the lid of the box. Keep a small opening and allow the cheese to rest in a cool place. If possible, keep the cheese at 85% humidity and 55 degrees F.
  6. After a week has passed by, take a peek and you see the surface mold. Soon after, white furry patches will develop. At this stage, wrap the cheese in a foil and keep in the fridge. It will take about 20 days for the cheese to ripen.

You can keep using the brie from now on and not keep it for more than 2 months as it will turn into a shell with liquid inside. Use the brie for making various recipes and have a great time.
