How to Make a Pumpkin Soup
Pumpkins are an integral part of American celebrations. During every holiday season or family gatherings, almost every kitchen gets fragrant with the smell of either a pumpkin pie or carved pumpkin decorations. In this article we shall know about the making process of delectable pumpkin soup. There are a variety of ingredients that can be used while preparing pumpkin soup to make it tasty. Being a versatile dish, pumpkin soup can grace every occasion within the family. There can be no better way of gifting your body loads of Vitamin-A than preparing pumpkin soup. There are certain ingredients that are required for making this recipe a success. They are as mentioned below:
- 2 cups of roasted pumpkin

- Around 2 cups of chicken/vegetable broth
- 1 cup of light cream or milk
- 2 tbsp of unsalted butter
- 2 carrots (peeled and diced)
- 1 medium onion (diced)
- 1 medium apple (diced)
- 2 cloves of garlic (minced)
- ½ tsp of chopped fresh thyme
- ½ tsp of chopped fresh parsley
- Salt and black pepper
Preparing and roasting the pumpkin is an integral part of making pumpkin soup. Though one can make the soup by using canned pumpkin puree but the taste is much better with fresh pumpkins. Let us first understand the process of preparing and roasting the pumpkin for the soup.
- You shall have to choose such a pumpkin for your soup that is small in size and is sweet to taste. Begin by rinsing the pumpkin under cool running water and then dry it by using paper towels.
- Take a sharp knife for the purpose of removing its stem. You now have to cut the pumpkin into half. Remove all the seeds and the stringy mass from its inside. However do not throw away the seeds; you can cook them later as snacks.
- Preheat the oven to about 350 degrees Fahrenheit. Take a baking sheet and place the pumpkin halves on it. You shall have to place them side ways down on the sheet.
- Continue cooking the pumpkin in the oven till it becomes soft and tender. After the pumpkin cools off, you can scoop out the flesh from its skin. This pumpkin flesh has to be now blended in a food processor to make its puree.
Now that we have prepared the pumpkin and made its puree, we can now proceed towards making the soup. Have a look at the following points that can guide you in the process in a better manner:
- Take a large stock pot and melt in it some butter over medium high heat. After the butter melts completely, you have to add the diced carrots, apple, onions and garlic. Continue to sauté the ingredients till they turn soft and tender. Now take the ingredients from the stock pot and put them in the food processor for making its puree.
- Once you have prepared the puree, add it to the stock pot again and to it add the pumpkin puree, chicken/vegetable stock and chopped parsley and thyme. Continue to stir all the ingredients till they start boiling. Once the mixture starts to boil, reduce the flame and allow it to simmer for about fifteen minutes.
- After 15 minutes, add some salt and pepper to the soup. You can also choose to add some cream to your pumpkin soup. Stir all of them together, however be careful so as to not let the soup boil.
- Your pumpkin soup is ready to be served.
