Storing the Wild Mushrooms

  1. Once you buy the wild mushrooms, you can store it inside the fridge to use over a few days. While storing these mushrooms, you have to prevent these from spoiling due to acquiring wet surface. So these fungi need to be stored in the fridge by wrapping with moisture-absorbent paper. However, you need not store the mushrooms for a longer period as these are considered to be in the best form immediately after being picked up.
  2. The wild mushrooms are available in the market in a dried up state. These dried mushrooms offer an exceptionally concentrated flavor that needs to be preserved by storing inside an air-tight container. You can store and use the dried mushrooms altogether for over a number of months.

Preparing the Wild Mushrooms

  1. The wild mushrooms require some specific preparations for cooking. You need to remove the debris and fragments by using a damp cloth or soft brush. Again, by using a sharp knife, you can cut off the soiled and damaged bits along with the tough stems. However, you must avoid washing these as the wash causes some damage to the wild mushrooms.
  2. Many people separate the stems and stalks and cut the cap into quarters to prevent any type of infestations. You need to cook and consume the mushrooms immediately after these are prepared.

Cooking the Wild Mushrooms

  1. Wild mushrooms are considered as a versatile ingredient to make a wide variety of soups, stuffing, sauces, and risottos. These mushrooms are further consumes along with bread toasts after being fried well in butter or olive oil.
  2. The wild mushrooms also combine with chicken in a classic manner. There are a number of popular French recipes using both these ingredients. These recipes are also popular due to the much lesser amount and efforts required to cook these dishes. You can cook the wild mushrooms along with the skinned chicken breasts cut into half size.
  3. Combine the chicken along with port wine, garlic and salt and let it marinate for about an hour. Place the chicken stock on heat and bring it to a boil.
  4. Reduce the heat to simmer and pour the mixture over the dried mushrooms. Let the dish re-hydrate for another hour.
  5. Reserve the stock after draining the mushrooms. Sauté the shallot in butter till it turn translucent. Now add the fresh dried mushroom and sauté for another five minutes.
  6. Now add the reserved stock along with double cream and port. Reduce the heat and add the processed chicken breast. Cook for about fifteen minutes simmer and serve the host dish to your guests.
