How to Cook Parsnips
Parsnips are a healthy winter vegetable which can really warm your senses with its sweet and nutty flavor. Parsnips can be used for making delicious soups with a thick texture. This vegetable has the capacity to house in itself several forms of flavor and taste such as spicy, sweet and earthy. Rarely do we find a vegetable which can provide such versatility in soups. You can relish parsnip soups as a starter delicacy or else just serve it as a stand alone dish. It is healthy along with being tasty to the senses. Here we will be focusing our attention towards knowing how to prepare parsnip soup. The recipe is not at all tough and can be prepared by almost anybody. It can also be cooked quickly. So, let us gather the things which are needed for preparing parsnip soup. They are as follows:
- A large saucepan
- 8 tbsp of butter
- 3 cups of parsnips (chopped)
- ½ cup chopped celery

- 2 medium onions (chopped)
- 2 tsp grated fresh ginger root
- 2 cloves of garlic (finely minced)
- 1 tsp thyme
- 1 tbsp cornstarch
- 1 tsp nutmeg
- 7 cups of vegetable stock
- 1 cup cream
- Salt and pepper according to taste
- Grated carrots
- Parsley flakes (dried)
- Food processor/Blender
The method of cooking delicious and mouth watering parsnip soup is as given below:
- Take a large saucepan. Melt in it 8 tbsp of butter. Then you have to add the 3 cups of chopped parsnips, ½ cup chopped celery, 2 chopped medium onions, 2 cloves of finely minced garlic, 1 tsp thyme, 2 tsp of grated ginger root and 1 tsp of nutmeg to the saucepan. Mix all these ingredients properly by stirring continuously. Lower the flame and allow it to simmer for about 8 to 10 minutes. You have to let all these ingredients cook until they have softened a bit. After that, you can remove the saucepan from the stove.
- Now just add some corn starch over the mixture and stir it well so that it blendes nicely.
- After this add 7 cups of vegetable stock to this mixture and stir it well so that all the contents blend together nicely. Now place the saucepan back on the stove and allow it to boil for a while. After you notice that the soup has started to boil, lower the flame and let it simmer for about 25 to 30 minutes.
- Now you have to remove the saucepan from the heat and pour the soup out onto a food processor or a blender. This is done to ensure that the soup blends smoothly and nicely. Incase you find that the soup has become too thin after blending it in the food processor; you just add 1 tbsp of cornstarch to it. This will make the soup return to its normal texture.
- Now you have to pour the soup back into the saucepan and place it on the stove. To this mixture, add 1 cup of cream and allow the contents of the saucepan to simmer for about 10 minutes.
- After the stipulated time of 10 minutes, you can add salt and pepper according to your taste and serve it hot by garnishing with dried parsley and grated carrots.
