  1. In the first step, you have to sauté one lb of lamb shanks. You can do this by heating some olive oil in a stock pot and cooking the lamb shanks over medium heat until they are nicely browned up. Continue cooking until they are uniformly done so that they both look and taste good. Then you can take them out and keep them aside for later use.

  3. As soon as the onions and garlic are done, you can add the other ingredients. These include half cup of red cooking wine, about 14 oz of beef broth, a pinch of freshly ground pepper and a bay leaf. Mix all of them nicely and add the lamb shanks. Cover the stock pot properly and cook for one hour over medium heat. If you cook over high heat, then all the broth will be absorbed or evaporated and you will not get the exact taste.
  4. Well, that’s not all. There is still more to follow. You can now chop finely two celery stalks, two carrots and one turnip and add them to the steaming stock pot. This will take about half an hour to be cooked. Find out if the lamb and the vegetables are done by pinching with a fork. Continue cooking until they are soft.
  5. Then you can extract the lamb shanks from the broth and cover them with aluminum foil. Make a smooth paste of some butter and 2 tbsp of all-purpose flour. Put this inside the gravy slowly with stirring. It will serve to make the broth quite thick. Then put some freshly ground pepper and salt into the broth for taste.
  6. Now your broth is ready and so are the lamb shanks. Finally you can serve the dish onto a large platter. Arrange the lamb shanks first and then pour out the vegetables and broth over the lamb. You can serve hot and eat immediately to get the best taste.
