How to Cook Jacket Potatoes
Jacket potatoes are healthy alternatives to roast potatoes and potato chips. This is because unlike other potato varieties where the skin is peeled off, the jacket potatoes are cooked along with the skin which keeps in intact all the vitamin C stored in the skin. - The first thing you need to do prior starting the cooking process is to pre-heat the oven to gas mark 5, 375°F (190°C).
- Next take the jacket potatoes and wash them well. Allow them to dry properly before cooking. However, if you are using ready-washed potatoes then you need not do this.
- Prick the skin of the potatoes few times with a fork. Apply few drops of live oil on each potato crack and then rub the oil all over the skin.
- After applying the oil, rub in some crushed sea salt. This will draw out the moisture from the skin and also work along with the oil to provide desired crunchiness.
- Now bake the potatoes. Place them straight on to the centre shelf of the oven. Allow them to bake for nearly 1.5 to 2 hours. However, the baking time will differ depending upon the size of the potato. Make sure that you make them until the skins turn crispy.
Toppings Preparation
In the meanwhile when the jacket potatoes are being baked, you can rustle up the
topping. Following are some of the variety that goes well with them:
- Chilli and Soured Cream
Heat some cooled chilli con carne and then spoon over the jacket potato. Top with some soured cream. - Tuna, Red Onion and Pepper
Take some finely chopped red onion and red pepper and place them in a bowl with a drained can of tuna. Add some mayonnaise and season with freshly ground black pepper. - Mushrooms and Cream
Fry some mushroom pieces until they become soft and are cooked properly. Add few drops of single cream and heat . While the added cream will soften the potato, the mushrooms will enhance the taste of the cooked potato.
How to Serve
When the jacket potatoes are ready to be served, carefully slit each potato in half lengthways. Now, with a fork, fluff the floury insides, also add a generous amount of butter. Add sea salt and crushed black pepper.
Serve the dish immediately because once you remove the jacket potatoes from the oven, they lose their crispness very quickly.
