  1. Buy a whole goose. Get it cleaned or clean it yourself.
  2. Rinse it with plain water and let it air dry for 2-3 minutes
  3. Keep it in a roasting tray
  4. Prick the goose in several places
  5. Keep a peeled onion inside it
  6. Now season it with salt ad pepper
  7. Use a little oregano in your seasoning
  8. Now sprinkle barbecue sauce all over the goose
  9. Preheat the oven up to 190 C/ 375F
  10. Cover the goose with foil and let it roast
  11. Remove the foil when 30 minutes to cooking are remaining
  12. Start cooking again this will make the top crisp and brown
  13. Once done, remove the goose and let it set for 20 miutes
  14. Serve the goose with apple sauce, mashed potatoes , tomato gravy and peppermint leaves.
