Ingredients for stuffing

  • Pitted prunes
  • port
  • fresh chestnuts
  • butter
  • chopped onion
  • paste of clove and garlic
  • Chopped stalks celery
  • chopped parsley
  • Coarse salt and freshly ground pepper

For Roasting

  • oven-ready goose with giblets
  • salt
  • pepper
  • cooking oil

Following are the steps that go into the preparation of a stuffed roasted goose:

  1. Soak the prunes in the port for an hour. In the meantime prepare the chestnuts. Carefully make cuts at the top of each piece with a sharp knife and then allow it to boil in hot water for ten minutes.
  2. Slowly start removing them from the boiling water with the help of a slotted spoon. Wearing clean rubber gloves, remove the outer and inner skin of the chestnuts. Now place them in a bowl.
  3. Take a large pan and melt some butter in it. Add onion, celery and garlic to the butter and cook the ingredients until onion turn soft. You do not need to continue cooking till it turns brown.
  4. Now add the chestnuts and prunes that have been soaked and let them simmer gently for 30 minutes.
  5. Also stir in the parsley and then season it with salt and pepper.

Roasting Process

  1. Firstly, remove the giblets and put them in a pot filled with water. Place the pot on flame and allow it to simmer gently for 3 to 4 hours. Strain the stock and thicken it by further boiling so as to make the gravy.How to Cook Goose41 How to Cook Goose
  2. Now stuff the goose with chestnut and prune stuffing already prepared.
  3. Preheat the oven to 200C/400F.
  4. Prick the skin with a fork and then season it with salt and pepper by rubbing them all over. Apply some butter or cooking oil to the flesh. Use the excess fat from the inside of the goose to cover its legs.
  5. Now put the goose in a meat tin with foil lining. Place it on a trivet or rack as per your convenience, with the breast side up.
  6. Place the goose in the oven, and allow 12 to 15 minutes for every 0.45kg/1lb plus 20 minutes.
  7. Keep checking whether the leg is covered and the skin is not burning.
  8. Once the time is over, remove the goose from the oven and place it in a carving dish for nearly 20 to 25 minutes before carving. Keep them covered until then.
