Rub some refined oil like sunflower or vegetable oil all over the fillet steak with the help of your fingers. Some people may also use olive oil but it has a lower boiling point and hence will burn the steak too soon. The inner part will remain uncooked. Leave it for some time and then add salt and pepper.   4. The next step is to place a heat a frying pan till it is extremely hot. Then place the fillet steak onto the pan and turn it over after 30 seconds. Continue to do this every 30 seconds till the steak is done. Normally it should take about 5-6 minutes to cook. But the exact time depends on your taste. If you like it a bit overdone, then you should keep it a little longer. Also, the size of the steak will decide the time. A larger steak will obviously take more time.
  5. The best way to check whether your steak is done is by testing it with your fingers. It should be exactly like you feel if you press your thumb and little finger together for the steak to be well done. Other fingers like the thumb and forefinger will give a rare steak. Practice will make you perfect. It will not do to listen to the instructions. The best teacher is experience.
  6. Then you can transfer the steak onto a warmed plate with a layer of red wine or butter on it. You must remember to let it stand for about 10 minutes before serving.
