Take 2 pieces of beetroot and cut them into small pieces. It depends on your skill to cut the pieces as small as you can.
The next step is to cook the beetroot with a little water and salt. Make sure that the water does not dry up and the beetroot does not stick to the bottom of the pan. 2 tbsp of water is enough to cook for 3 minutes. Cover and cook so that the cooking time is lowered.
If the entire water has not dried up even after 3 minutes, then uncover the pan and cook for some more time until it becomes completely dry.
Take another pan and heat about 1 tsp of cooking oil. You can add some mustard seeds for taste.
After the seeds start to crackle, cut one onion into pieces and about 3 green chillies and add to the oil and mustard seeds.
Fry for some time till the onion is translucent and then add 1/4th tsp of turmeric powder.
Stir fry for some time and then add the cooked beetroot.
It will take another 3-4 minutes for the dish to be completely prepared.
You can then garnish it with minced coriander leaves and serve with rice.
