Ingredients for 2 servings:

  • 1 ½ cup chopped small or thin beetroot sticks
  • 1 tbsp vegetable oil
  • 1/4 tsp cumin seed
  • ½ tsp lemon juice
  • ½ tsp pepper powder
  • ½ cup chopped onion
  • Salt to taste
  • 3-4 tbsp water
  • 1 tbsp freshly grated coconut (optional)

Cooking Steps:

  1. Firstly heat vegetable oil in a pan and add cumin seed to it. Let it splutter. Add onions and cook for few minutes.

  3. Cover the pan and allow the ingredients to cook for 5 min on low flame.
  4. Keep checking the beet root to find if it is cooked to your liking or not. If it’s taking time then add some more water to avoid burning.
  5. Now add salt, pepper powder and coconut (if using) and mix well.
  6. Once cooked, remove the pan from the flame and add lemon juice over the dish.
  7. You can serve this beet root dish either with plain steamed rice or even with any vegetable rice. When served as a vegetable side dish, it not only adds color to the meal but also makes it tastier and healthier.

Tips for Cooking Beet root

  • Go for beets of even size to ensure uniform cooking.
  • Add one tablespoon of vinegar to beet cooking water it will reduce the odor of the cooking beets and also retain their bright color.
  • If you are using older beets, then try adding a pinch each of sugar and salt to each cup of cooking water in order to revive their sweetness and color.
