- Keep in mind that braising is a method of cooking that suits those meats well that have an aroma of their own. Therefore whenever you decide to cook flavorful meats, make sure that you braise them rather than cooking by any other methods. Braising which is basically slow cooking the meat in less liquid for a long time, can help the meat to taste good and shall also help the meat in retaining the juices. We shall now focus on preparing the beef spare ribs. This can be done by using a little bit of salt and pepper to be sprinkled on the ribs and then adding some flour to the spare ribs. Make sure you ensure that the flour covers the ribs entirely and properly. Here we are using flour to make the outside of the spare ribs crispy. Do remember that flour can also help in making the gravy thicken in texture once it starts cooking.
- Now we have to sear the spare ribs and the vegetables. Use some olive oil in a Dutch oven and heat it over medium heat. You shall now have to add the spare ribs to the oil but in batches. Continue searing each side of the spare ribs for about 5 minutes. You shall notice that a dark brown crust starts forming over the ribs. This in an indication to remove the ribs and place them on a plate. Use a foil to cover the ribs. Start chopping the vegetables and add them to the oil to sauté them. Keep on cooking them for about 7 minutes. Use the tomato paste and the anchovy fillets to be added to the middle of the pot and let them stay undisturbed for about 5 minutes.
- You shall now have to add the liquid and the meat to the pot. Add the red wine to the pan for the purpose of deglazing it. After having done that, add the thyme, honey, Chinese five spices and some salt and pepper to taste. Stir all the ingredients well. Now add the meat to the pot. Ensure that the liquid in the pot covers the meat upto halfway. Start simmering the liquid and then lower the heat and cover the pot.
- Cook the meat as long as you can. If you have time on your hands, you can decide to slow cook the meat for an entire afternoon. This will make the meat taste even more delicious.
